Slow-Cooked Harvest Fruit Compote

Directions

Grate 1 teaspoon zest from the lemon.

Stir the prunes, mixed fruit, apricots, cranberries, raisins, juice, wine, lemon zest and vanilla extract in a 6-quart slow cooker.

Cover and cook on HIGH for 4 to 5 hours.

24 ounces (about 4 cups) dried prunes
7 ounces (about 1 1/2 cups) mixed dried fruit
6 ounces (about 1 1/2 cups) dried apricots
0.5 cup sweetened dried cranberries
0.333 cup raisins
