Berry Pound Cake

This simple, 4-ingredient pound cake uses mixed berry juice to make it especially moist and delicious.

Directions

Heat the oven to 350°F.  Lightly grease a 9 x 5 x 3-inch loaf pan.

Beat the cake mix, 3/4 cup juice and eggs in a medium bowl with an electric mixer on medium speed for 3 minutes or until the batter is thick and smooth.  Pour the batter into the pan.

Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan on a wire rack for 10 minutes. Remove the cake from the pan and let cool completely on the wire rack.

Stir the confectioners' sugar and remaining juice in a small bowl until the mixture is smooth.  Drizzle over the cake.

1 box (about 16 ounces) pound cake mix
0.75 cup  plus 1 1/2 teaspoons V8 Splash® Berry Blend
2 egg
0.25 cup confectioners' sugar
